My Mummy's better than your Mummy.

With some time all to myself on Mother's day weekend, it's the perfect opportunity to throw some love out to the number one lady in my life; Momma Freeman. 

Where do I start with this woman? She's bloody incredible with the patience of a Saint (you'd have to putting up with my Dad for over 30 years ...).

For 23 (almost 24) years you have been my absolute rock. Believing in me no matter what, even when I didn't believe in myself. Holding my hand when I'm being the biggest baby on the planet, which believe me happens a lot. Not a day goes by when I'm not thankful for everything you do, how you find the time and energy I will never know. You're not just my Mum, you're also a Sister, Wife, Grandmother, Daughter and best friend, and I know no one could ask for better.

How did you find the energy, Mom
To do all the things you did,
To be teacher, nurse and counselor
To me, when I was a kid.

How did you do it all, Mom,
Be a chauffeur, cook and friend,
Yet find time to be a playmate,
I just can’t comprehend.

I see now it was love, Mom
That made you come whenever I'd call,
Your inexhaustible love, Mom
And I thank you for it all.

The parents decided to venture away this weekend, and with it being Mother's day on their return, I figured I'd try and rustle up some special treats. 

Most of you will have heard me ramble on about my friend Caitlin many a time, and for Christmas she treated me to the most wonderful gifts from Laduree. 

Amongst them was an incredible Macaron recipe book, far too beautiful to keep in the kitchen! Flicking through I spotted an Alice in Wonderland recipe for Apple Macarons. 

Perfect!

Past baking attempts haven't proved too positive on the Macron front, but I had a bash anyway. 

Voila.

Not a patch on something you'd find in store but they're pretty tasty, and I'm sure Momma Freeman will enjoy, it's the least she deserves.
